1 cup cornmeal
4 tbsp flour
pinch of salt
1/2 tsp baking soda
1/2 tsp sugar
3/4 cup milk
2 eggs
1 cup corn
1 cup Blue Cheese
Combine the cornmeal, flour, salt, baking soda, sugar, milk and eggs in a mixing bowl. Whisk until smooth.
Fold in the corn and blue cheese. Adjust the consistency with flour to make a thick batter.
Heat a sauté pan over medium heat, add oil and scoop a tablespoon of batter and place in pan.
Cook on both sides until golden brown.
Serve with heirloom tomatoes and a good quality olive oil
