All Berried-Up Oatmeal Crisp

Most everyone loves a dessert using fresh summer fruits.  In this edition of "Get Cookin'", a recipe combining your favorite seasonal berries into All Berried-Up Oatmeal Crisp.

Ingredients: 

Crisp Topping-

1/3 c each of chopped almonds, pecans, walnuts

1 cup oats

3-4 T pure maple syrup

2 T wheat germ

2 T whole wheat pastry flour

1 tsp ground cinnamon

½ tsp nutmeg

½ tsp vanilla extract

Filling-

1 c blueberries, fresh or frozen

1 c sliced frozen peaches, thawed

2 c sliced frozen strawberries, thawed

¼ c splenda

1 tsp ground cinnamon

1 tsp lemon zest

Directions: 

  1. Preheat oven to 325 degrees F
  2. To prepare crisp, spread nuts on a baking sheet and toast for 5-8 minutes or until golden brown.
  3. Transfer nuts into mixing bowl.  Add the oats, syrup, wheat germ, flour, cinnamon, nutmeg, and vanilla. 
  4. For the filling, slice the strawberries and the peaches.  Toss with the cinnamon, Splenda, and lemon zest.
  5. Spread the fruit in an 8 or 9 inch square baking pan or pie plate.  Top with the crisp mixture. 
  6. Bake for 15-20 minutes, or until the fruit is tender and the crisp is lightly browned.

Yield:   12, ½ c servings

Nutrition information per serving: 141 calories, 4 g protein, 17 g carbohydrate, 8 g total fat with 0.7 g saturated fat, 0 mg cholesterol, 3 g dietary fiber, 2 mg sodium
