Ingredients:
Ahi Tuna (8 oz)
1 cup flour seasoned
sesame and olive oil mix
Angel hair pasta (6 oz)
1 carrot
1 bunch scallions
1 cup chicken stock
1/2 cup dry roasted peanuts [optional]
peanut sauce
6 oz soy sauce
3 oz brown sugar
3 oz ketchup
1/4 tsp ginger
1/4 tsp fresh garlic
4 oz crunchy peanut butter
mix all together until smooth
Directions:
dredge tuna in seasoned flour and sear in olive and sesame oil mix
In separate pan, put sesame oil. Heat, add carrot and blanch, add chicken stock and peanut sauce bring to boil
Add cooked angel hair pasta, toss, add scallions, plate
Take seared tun, slice and arrange around plate, drizzle with peanut sauce and finish with peanuts.
