Edamame Dip (Gluten Free)

When it comes to expanding our palates, most of us could use some encouragement.  News On 6 reporter Rick Wells and St. John dietitian Marianne Wetherill are ready to Get Cookin' on a new take on bean dip.

Ingredients: 

2 cups edamame, cooked

3 Tbsp olive oil

3 Tbsp lime juice

¼ tsp table salt

2 garlic cloves

1 tsp cayenne pepper

1 tsp white pepper

Cajun seasoning to taste

Directions: 

  • 1. Boil edamame for 5 minutes. Place edamame in a colander and cool off with cold running water.
  • 2. In a small food processor, combine the edamame, olive oil, lime juice, salt, garlic, cayenne, and white pepper.
  • 3. Mix ingredients on high until consistency is creamy.

Yield:   9, ¼ cup servings

Nutrition information per serving (without Cajun seasoning): 83 calories, 4 gm protein, 2 gm carbohydrate, 4 gm fiber, 6.8 gm fat with 1 gm saturated, 65 mg sodium

Exchanges per serving: ½ lean meat, 1 fat

Edamame dip can be served alongside whole grain crackers, baked chips, or even used as a sandwich spread or pita pocket stuffing.  Additional ingredients to your dip can include avocado, plain yogurt, tomatoes, onions, or olives.  (Edamame can be found in the frozen foods section at your grocery store.)
