1/2 C fresh bread crumbs1 Tbsp olive oil 1/2 lb shrimp 1 C mixed herbs (your choice) chopped 2 small shallots, chopped fine 2 Tbsp olive oil splash of mild white wine vinegar 1/2 lb spaghetti salt & pepper to taste
Directions:
Heat 1 Tbsp olive oil in a small skillet. Add bread crumbs and toss until lightly toasted. Set aside. In a large bowl, add shallots, 2 Tbsp oil and white wine vinegar (about 1 1/2 Tbsp) and let set for 15 minutes.
While spaghetti is cooking, grill the shrimp. Place herbs in the bowl with shallots and toss. Add warm spaghetti and shrimp to the bowl. You might want to add a Tbsp or two of the cooking water to the bowl, along with salt and pepper to taste.
