1 1/2 lbs hamburger meat 1 large onion 1 (14oz) can mexican style stewed tomatoes 1 (10oz) can enchilada sauce (mild or hot) 8 oz velveeta cheese, cubed 3 oz cream cheese 1 (4oz) can chopped green chiles 2 tsp ground cumin 1/2 tsp salt 1/2 tsp pepper 3 cups tortilla chips
Directions:
Place crushed tortilla chips in greased 13x9 baking dish. Cook, crumble, and drain hamburger and onion. Add next six ingredients and stir, cooking til bubbly. Spread 3 oz pkg of cream cheese over half side of flour tortilla (8 in all). Sprinkle a can of chopped green chiles over cream cheese. (John prefers more cream cheese, that way he can get more fat grams worked in) Spoon 2/3 of beef mixture over crushed chips. Fold tortillas in half and arrange over meat mixture down center. Spoon rest of meat down center of tortillas. Bake at 350 for 20 min. Remove from oven, sprinkle 1 cup shredded Monterey Jack cheese over top and bake 5 more minutes.
