1 cup white rice 1 (10 oz) can Rotel tomatoes and chilies, chopped 1/4 cup diced bell pepper 4 chopped green onions 1 cup fat-free cheddar cheese 1/2 (16 oz) can fat-free refried beans 1 package fat-free flour tortillas Salsa
Directions:
Preheat oven to 350 degrees. Bring rice to boil as directed by package and add Rotel; simmer until rice is done. Add bell pepper, green onions, and cheese. Mix thoroughly. Spread 1-2 tablespoons of refried beans on tortilla. Then spread 1-2 tablespoons of rice mixture over refried beans. Roll up and place seam down on a baking pan sprayed with non-fat vegetable spray. Repeat until desired amount of tortillas have been used. Bake at 350 for 20 minutes. Remove from oven and slightly cool. Cut into bite-size rolls with electric knife or serrated knife.
