1 can (15 ounces) Great Northern beans, drained and rinsed1 can (15 ounces) black beans, drained and rinsed 1 1/4 cup chopped tomatoes 3/4 cup diced red bell pepper 3/4 cup diced green bell pepper 3/4 cup sliced green onion 1 cup salsa 1/4 cup red wine vinegar 2 tablespoons chopped cilantro 1/4 teaspoon salt 1/8 teaspoon ground black pepper 6 cups shredded lettuce
Directions:
Combine all ingredients except lettuce in a large mixing bowl. Chill 2-4 hours. To serve, place 1/2 cup lettuce on a plate. Top with 1/2 cup bean mixture.
