3 cups cooked brown rice1 can (15-ounces) black beans, rinsed and drained 2 cups frozen soy based meatless ground burger 2 tablespoons balsamic vinegar 1 teaspoon ground cumin 1/4 teaspoon salt (optional) 1/4 teaspoon ground black pepper 1 can petite diced tomatoes, rinsed and drained 1/4 cup minced fresh parsley 2 tablespoons minced fresh cilantro
Directions:
1. In a large microwave safe bowl, combine rice, beans and soy crumbles. Heat on high approximately 3 minutes or until warm throughout. 2. Add next 7 ingredients (vinegar, cumin, salt, pepper, tomatoes, parsley and cilantro) and toss until well blended. 3. Serve warm or at room temperature.
