Ingredients:
2 sweet potatoes ( about 3/4-lb.)2 tablespoons butter
2 tablespoons sour cream
1 egg, lightly beaten
1/2 cup freshly grated Parmesan cheese
1/4 teaspoon freshly grated nutmeg
1/8 teaspoon freshly ground pepper
Directions:
Heat oven to 400 degrees. Prick sweet potatoes witha fork. Bake 1 1/4 hours or until tender or if using a microwave cook for 5-7 minutes. Let potatoes cool to lukewarm; cut in half. Remove flesh and put in bowl. Leaving about 1/4 inch shell. Mash potaoes with butter. Stir in sour cream, egg, cheese, nutmeg and pepper. Scoop or pipe mixture into shells. Potatoes can be prepared up to one day ahead to this point. Cover and refrigerate. When ready to cook, heat oven to 350 degrees. Place potatoes on baking sheet. bake 30 minutes or until heated through.(160-170 degrees internal temperature)
