4 slices of bacon 1 medium onion, minced 6 medium tomatoes, cut up 1 green bell pepper,chopped 1 cup okra 16 oz bag frozen corn, thawed 1/2 cup long grain rice 1 teaspoon salt 1/4 teaspoon pepper 1?2 teaspoon chili powder
Directions:
Cook bacon until crisp. remove from pan. Drain. Crumble and set aside. In large saucepan or Dutch oven brown onion, until tender in 3 tablespoons of bacon grease. Add remaining ingrdients and cover and simmer for 20 minutes or until rice is tender. Serve with bacon on top. Yield: 6 servings.
