4 medium to large zucchini 1/2 cup shredded Monterey Jack cheese 1/4 cup chopped green onions 4 bacon slices, cooked and crumbled 2 Tablespoons chopped green chilies 1/2 teaspoon pepper 1/2 teaspoon salt 1/2 cup breadcrumbs from Panera sourdough or French bread 1-3 Tablespoons melted butter or margarine
Directions:
Cut zucchini in half lengthwise. Microwave on a glass plate for 5 minutes or until tender. Cool. Scoop out pulp, keeping shells intact; reserve pulp. Stir together the reserved pulp, cheese, green onions, bacon, chopped green chilies, salt, and pepper. Fill shells with pulp mixture. Sprinkle with breadcrumbs. Drizzle with butter. Bake at 375 degrees for 15 minutes or until cheese is melted and bubbly.
