Chutney:
1 1/2 C. fresh mint
1/4 C. red onion
3 T. water
2 T. lime juice
1 T. orange juice
1 tsp. orange zest
1 T. sugar
1/4 tsp. kosher salt
1 fresh chile pepper or jalapeno seeds removed

Segments of 3 oranges

Directions:
Process all the ingredients in a food processor until the mint has been chopped completely. Remove from the processor and add the segments. Serve at room temperature.

To sear the tuna season each side with salt, pepper and cinnamon. Using a hot skillet cook the tuna on each side for approximately 2-3 minutes for a beautiful medium rare.
