2 pkgs. (1 oz. each) sugar-free white chocolate instant pudding mix2 ½ C. chocolate soy milk 1 ½ C. light whipped topping, divided use 1 ¼ C. miniature marshmallows, divided use 6 thin chocolate wafers (approximately 2 ½ inches each, 4g fat per 5 cookies) 1 ½ tsp. finely chopped pecans ½ oz. milk chocolate for fruit dipping or candy making
Directions:
In a large bowl, blend pudding mix and soy milk until smooth. Fold in ½ cup whipped topping and 1 cup miniature marshmallows. Chill. Place a chocolate wafer in bottom of dessert cup. Top with ½ cup pudding mixture. Repeat with remaining wafers and pudding. Garnish each with remaining whipped topping, marshmallows and pecans. Tip: Shake soy milk carton well before measuring
