Butter-flavored cooking spray 2 pounds sweet potatoes, peeled and cut into uniform pieces 2 tablespoons light margarine 3 medium pears, peeled and chopped ½ teaspoon cinnamon ¼ teaspoon vanilla extract ¼ cup egg substitute or 2 egg whites or 1 whole egg Praline Topping 3 tablespoons brown sugar 2 tablespoons light margarine 1 tablespoon fat-free half and half 1/3 cup pecan pieces
Directions:
1. Preheat oven to 375 degrees. Spray a baking sheet with cooking spray and set aside. 2. In a large saucepan bring water to a boil. Cook potatoes until tender, approximately 15-25 minutes. Drain well. 3. Meanwhile melt margarine in a medium skillet. Add pears and cook covered over medium heat until tender, stirring occasionally. 4. In a medium mixing bowl combine potatoes, pears, cinnamon and vanilla extract. Combine with an electric mixer on low speed. Cool slightly and add egg. Continue to mix until well blended. 5. Spoon mixture into 12 even mounds onto baking sheet (approximately 1/3 cup each). Make a slight indention in each mound using the back of a teaspoon. 6. Combine all praline-topping ingredients together in a small mixing bowl, brown sugar, margarine, half and half and pecan pieces. Spoon a small amount onto each sweet potato mound and bake for 15-20 minutes or until lightly browned.
