Ingredients:
2 potatoes
2 tablespoons green onions, chopped
2 tablespoons reduced fat cheddar cheese
1 tablespoons cholesterol free bacon bits (optional)
1 tablespoon black olives
Black pepper
2 tablespoons fat-free sour cream
Cooking spray
Directions:
Bake potatoes in microwave until done. Remove from microwave when done and wrap in foil; let stand for 5-10 minutes. Unwrap potatoes and cut into half and then fourths. Gently scrape out the insides of the potato, leaving some of the potato around the edges and bottom. Season potato skins with pepper. Sprinkle each potato skin with green onions, bacon bits, olives, and cheese. Spray pan with cooking spray. Place potato skins on pan and lightly spray with cooking spray. Place under broiler until golden brown. Remove from broiler and spread with sour cream. Serve warm.
