2 servings, 2 cups each
Ingredients:
Butter-flavored cooking spray1 beef bouillon cube
1 tablespoon water.
1 medium sweet onion
1 1/2 cups frozen shredded hash brown potatoes
1 tablespoon dried parsley
Directions:
1. Preheat oven to 375° F. Spray 4 muffin tin cups with butter-flavored cooking spray. Place bouillon cube and water in small microwave-safe bowl. Heat in microwave 20-30 seconds or until cube dissolves. Set aside.

2. Cut onion in half widthwise. Remove ends and outside skin. Separate onion into layers. Line muffin cups with onion.

3. Chop remaining onion and place in a medium mixing bowl along with potatoes, parsley and bouillon. Spoon mixture evenly into onion cups. Spray lightly with butter-flavored cooking spray and bake 20 minutes or until potatoes are lightly browned.
