Non-stick cooking spray1 tablespoon butter 1/2 cup prune puree 3/4 cup brown sugar 1/3 cup sugar 1 teaspoon vanilla extract 3 tablespoons water 1 cup flour 1/2 teaspoon salt 1/2 teaspoon baking soda 1 teaspoon cinnamon 1/4 teaspoon nutmeg 2 cups quick cooking oatmeal 1/2 cup raisins 1/4 cup chopped pecans
Directions:
Preheat oven to 375 degrees. Spray a cookie sheet with non-stick cooking spray. In a large mixing bowl, cream butter and prune puree. Gradually add sugars, vanilla and water. Blend until smooth. In a small bowl, combine flour, salt, baking soda, cinnamon and nutmeg. Stir into sugar mixture. Gradually add oatmeal, raisins and pecans and mix well. Scoop 2-talbespoons of dough onto cookie sheet and flatten slightly with hand. Repeat with remaining dough. Bake 10-12 minutes. Transfer to cooling rack.
