Ingredients:
1 1/2 cups whole wheat flour
1 tablespoon baking powder
1/2 teaspoon salt
1 1/2 cups Kellogg's All-Bran Cereal
1 1/4 cups skim milk
1/4 cup honey
1/4 cup vegetable oil
1 tablespoon dark mollasses
1 egg
3/4 cup chopped, fresh mango
2 teaspoons finely chopped crystallized ginger
Directions:
Stir together flour, baking powder and salt. Set aside. Measure cereal and milk into large mixing bowl. Stir to combine. Let stand 2 minutes or until cereal is softened. Add honey, oil, molasses and egg. Beat well. Stir in mango and ginger. Add flour mixture, stirring only until combined. Portion batter evenly into muffin pan. Bake at 400 degrees for 25 minutes or until muffins are golden brown.
