4 eggs, beaten 1 cup sugar 1 tsp. vanilla 1 tsp. baking powder 1/4 tsp. salt 2 cups milk 1 cup flour 1/2 cup coconut
Directions:
Preheat oven to 325 degrees. Mix the eggs, sugar, vanilla, baking powder, salt, milk, flour and coconut together until smooth in a large mixing bowl. Pour mixture into a 9-inch pie plate. Bake for 50 - 60 minutes or until golden brown. The middle of the pie should be set before removing from oven. The flour will form the bottom crust. The middle will have a custard-like consistency and the coconut will rise to the top of the pie.
