For the Crust- 2 cups all-purpose flour 1 cup butter, softened 1/2 cup confectioners' sugar
For the Filling- 4 large eggs, beaten 1/4 cup all-purpose flour 1 3/4 cups sugar Pinch of salt 1/2 cup Key lime juice 1/2 tsp. baking powder
Additional confectioners' sugar for dusting.
Directions:
Preheat oven to 350 degrees. For crust, combine flour, butter and confectioners' sugar in food processor using a metal blade until fine crumbs are formed. Pat mixture into bottom of ungreased 13 X 9 inch baking dish. Bake for 20 minutes. Remove from oven.
For filling, combine eggs, flour, sugar, salt, lime juice, and baking powder in same food processor. Blend well. Pour over crust. Bake for 25-30 minutes. When a knife has been inserted into the center of the dessert and it comes out clean, it is done. Cool completely. Sprinkle with additional confectioners' sugar and cut into squares. Garnish with zest of a lime. Yield: 24 squares.
