Four Bean Bake

Yield:
12 servings, approximately ½ cup each
Ingredients:
Vegetable oil cooking spray1 can (15.5 oz) kidney beans, drained and rinsed
1 can (15.5 oz.) butter beans, drained and rinsed
1 can (15.5 oz.) pinto beans, drained and rinsed
1 can (16 oz.) vegetarian baked beans, undrained
4 strips turkey bacon, chopped
1 C. chopped onion
½ tsp. minced garlic
½ C. ketchup
½ C. brown sugar
¼ tsp. liquid smoke
½ tsp. mustard
Directions:
Spray a 2 ½-quart baking dish with vegetable oil cooking spray. Combine beans in baking dish. Set aside. Spray a skillet with vegetable oil cooking spray. Over medium heat, brown chopped bacon with onion. Add garlic, ketchup, brown sugar, liquid smoke and mustard. Simmer 10-20 minutes. Combine sauce with beans in casserole dish. Bake uncovered for 1 hour.
