Cumin Slaw

Ingredients:
Salad:

3 C. chopped green cabbage
3 carrots, shredded
1 jalapeno pepper, finely chopped
1/4 C. freshly chopped cilantro

Dressing:

1/4 C. olive oil
1/2 tsp. cumin
1/2 tsp. salt
1/2 tsp. black pepper
3 T. fresh lime juice

Directions:
Combine salad ingredients in a medium bowl. In a separate bowl, mix dressing ingredients well. Pour over vegetables and stir to coat well. Cover and refrigerate 3-4 hours to allow flavors to marry.
