1 1/2 C. old fashioned oats2 C. flour, all purpose 1/2 tsp. baking powder 1/2 tsp. baking soda 3/4 cup beans, great northern, drained 3 T. light butter (Land O'Lakes) 1 C. brown sugar, packed 2 large eggs 1 tsp. vanilla extract 1 C. milk chocolate chips
Directions:
Heat oven to 350 degrees F. Combine first five ingredients, set aside. In a blender, puree the beans with 2 tablespoons reserved bean liquid, until smooth. Combine bean puree, butter, sugar, eggs and vanilla in a large mixing bowl. Gradually mix in flour mixture. Fold in, by hand, chocolate chips. Spoon batter onto baking sheet (by the tablespoon). Bake 15 minutes until center of cookie is firm to touch and edges are browned.
