1 large whole chicken, approximately 5 pounds. washed, lumps of fat removed and blotted dry. 8 tbsp sweet & sour rub 1 12 oz. can of beer
Sweet & sour rub is made by combining 3 tablespoons each of course ground pepper, kosher salt, chili powder and brown sugar.
Directions:
Prepare grill or barbecue for indirect grilling method. Sprinkle 2 tablespoons of rub inside chicken. Sprinkle 4 tablespoons on outside of chicken. Open can of beer and make a few additional holes in the top. Pour out, or drink half add remaining 2 tablespoons of rub to the can. Holding the chicken upright, insert can into cavity.Spread out the legs to form a sort of tripod and chicken stands upright. Place bird on the grill away from the heat and cook until golden brown and fall off the bone tender, about 2 1/2 hours. Remove beer can and discard. Present the chicken on a platter and then carve the chicken and serve.
***Chicken can also be cooked in the oven at 325 degrees for 2 1/2 hours. Internal temperature should be 180 degrees.
