Ingredients:
1/4 cup Dijon-style mustard
1/4 cup low-fat or fat-free mayonnaise
2 chicken breasts (skinned, halved)
1 cup cornflake crumbs
1/3 cup Parmesan cheese
Directions:
Blend mayonnaise and mustard and coat chicken; roll in crumbs. Cover with cheese and bake at 325 degrees F. for 1 hour.
