Butter-flavored cooking spray2 large potatoes (approximately 1 ½ lb. total), sliced thin ½ medium onion, sliced ¼ C. imitation bacon bits ¾ tsp. minced garlic ¼ tsp. salt ¼ tsp. ground black pepper ¼ tsp. paprika ½ C. low-fat cheddar cheese (1.5g fat per ¼ cup) 2 green onions, sliced
Directions:
Preheat oven to 375 degrees F. or gas grill to medium heat. Spray a 12 x 18-inch sheet of heavy-duty aluminum foil with butter-flavored cooking spray. Place potatoes and onions on foil. Spray lightly with butter spray. Sprinkle with bacon bits, garlic, salt, pepper and paprika. Place a second piece of heavy-duty foil over potatoes. Fold edges together to make a sealed packet. Place on cookie sheet and bake 45-50 minutes. (Or place packet on top rack of grill, cover and grill 45-50 minutes.) Open packet and sprinkle with cheese and sliced green onions. Let stand 5 minutes before serving.
