- Serves 4
- 16 Large mushrooms
¼ cup Chopped onions
¼ cup Whole wheat breadcrumbs (see dry bread crumbs recipe)
¼ cup soy protein sausage or low fat pork sausage
2 Tbsp. olive oil
Fat Free butter spray - Parkay
1 teaspoon Chopped sage
Salt and pepper to tasteFor Dry Bread crumbs: You must first place the bread in a 250 degrees F oven until fully dried, 12 to 15 minutes. Let the bread cool, then transfer to the food processor and process until fine. Store in tightly sealed container in refrigerator or freezer.
- Wash and peel mushrooms. Remove stalks and discard. Spray each mushroom with butter spray. Fry onions 2 T olive oil. When tender, mix onion and butter with breadcrumbs, sausage, sage, salt, and pepper. Divide among the mushrooms. Place mushrooms in a shallow ovenproof dish, pour 4 tablespoons of water into the bottom of the dish, and bake for 15-20 minutes in a moderate oven.
