Chad Horvath, Montereau's Director of Food and Beverage, shares a recipe for an apple walnut quinoa salad.
Ingredients:
2 cups Cooked Quinoa
1 cup ¼” Diced Apples
¾ cup Chopped Walnuts
1/3 cup Goat Cheese
2 cups Arugula
½ cup Dried Cranberries
¼ cup Olive Oil
1/3 cup Honey
3 tbl. Apple Cider Vinegar
2 tbl. Lemon Juice
Salt & Pepper: to taste
Directions:
1. In a bowl add cooked quinoa, apples, walnuts, goat cheese, arugula, and dried cranberries
2. Toss together
3. Add in bowl Olive oil, honey, apple cider vinegar, lemon juice, salt and pepper
4. Serve Chilled
