Erin Barnhart with Panera Bread has a recipe for pizza mac & cheese.
·½ cup onion, diced ½ inch
·½ cup bell pepper, diced ½ inch
·16 oz. Panera® Mac & Cheese
·½ cup Panera® Creamy Tomato Soup
·5 oz Italian-style chicken sausage, cooked, diced ¼ inch
·¼ tsp. Italian seasoning
·½ cup mozzarella cheese, shredded
1. Preheat oven to 400°F. Heat oil in a small sauté pan over medium heat. Add onion and peppers and cook 5-6 minutes or until tender.
2. In a medium bowl, combine Mac & Cheese, Tomato Soup, sausage, onion and pepper mixture, and Italian seasoning, stirring everything together. Divide mixture evenly into two ramekins or small, shallow baking dishes (approx. 10 - 12 oz. each).
3. Top each with mozzarella and bake for 15 – 20 minutes or until Mac 7 Cheese is heated through and cheese is beginning to brown around the edges.
