Summer will be here before you know it and with that comes outdoor grilling season.
To prepare for the season, the Cowboy Cook Jeff Tracy is back with some recipes for stuffed portabella mushrooms and baby back ribs.
Stuffed Portabella Mushrooms
Ingredients
Mushrooms & Stuffing:
- Shrimp 8-10 oz. (use a combination of large and cocktail shrimp)
- •½ cup chopped green onion
- Capers
- 8 ounces of softened cream cheese
- 1 cup sour cream
- 1 cup bay shrimp (cocktail shrimp)
- Horseradish
- Portabella mushrooms
- Shredded mozzarella
- Grated Parmesan cheese
- Slice tomato
- Sliced Fresh Pineapple
- Salt and Pepper to taste
Directions:
- Add sour cream (about 1 cup) and the cream cheese together in a bowl
- Mix it all up with the salt pepper and garlic. (And add some horse radish for a kick)
- Add the shrimp, green onions and capers to the mixture (but leave a few shrimp out for later)
For the portabella mushroom:
- Take the stem off the mushroom and lay the top of the mushroom upside down in a veggie pan on the grill (preferably a pan with edges)
- Scoop the mixture onto the mushroom on top of either the tomato or pineapple (you can never have too much!)
- Sprinkle shredded mozzarella and provolone cheese on top
- Use the leftover shrimp and put them on top of the cheese
- Sprinkle fresh grated parmesan cheese on top of it all
- Add more capers (to make it look nice)
- Cook for 4 to 5 minutes at 425 degrees (basically just to melt the cheese)
- Arrange 2-3 large shrimp and capers
- Remove from grill or smoker and let sit for 3-4 minutes before serving.
- Each mushroom should serve at least 2-3 people
Baby Back Ribs
Directions:
- Preheat your grill/ smoker to 225-235°F.
- Remove the membrane on the back side of the ribs with a knife and a paper towel. If you can’t do that then score the back of your ribs with a sharp knife.
- Coat both sides with your preferred seasoning or created your own. You know what flavor you like. Salt pepper, garlic, and a lite mix of brown sugar makes and excellent basic rub.
- Place the seasoned baby back ribs on the grates of your grill, meat side up, and smoke for 2 hours.
- Spritz your ribs with some apple juice or a juice you like the flavor of after the first 45 minutes. Continue to spritz in 30-minute intervals.
- After 2 hours, flip the ribs and cook for another hour.
- Baste your ribs the last 15 minutes of your cook.
- If you have lots of time cook your ribs at 210 and ad another hour in the smoker.
