Welcome to the Cooking Corner in the Air Comfort Solutions Kitchen. Devin Levine joined News On 6 to show us how to make Vegan Cajun Sausage with Red Beans and Rice.
Ingrediants
½ # Vegan Beyond Sausage
2 cups Red Beans, cooked
¾ cup Tomatoes, diced
1 tabl Fresh Garlic, minced
½ cup Onions, diced
1 cup Vegetable Broth
2 tabl Vegetable Oil
2 tabl Cajun Seasoning
3 cups White Rice, cooked
¼ cup Scallions, chopped
Method:
Heat oil in a skillet; add onions & garlic and lightly brown, add beans, vegan sausage, Cajun seasoning and broth and simmer for approximately 5 minutes. Mould rice in center of dinner bowl; ladle bean and sausage mix over all and sprinkle with chopped scallions. Add Louisiana Hot sauce as needed.
