As the weather gets nicer a lot of people are firing up their smokers for the first time. Carolyn Piguet from Piguet's Prime Time joined News On 6 in the Cooking Corner to show us how to make her "Jack'd Up Smoked Meatloaf"

Ingredients

2 lbs. of ground beef

1/2 cup Saltine cracker crumbs

1/2 cup sweet onion, grated

2 cloves garlic, minced

2 Tbsp. of Cajun spice mix

1 Tbsp. of Worcestershire Sauce

1/4 Cup Milk

6 oz. Pepper Jack Cheese cut into strips

Meatloaf Sauce

1/2 Cup Ketchup

1/3 Cup Brown Sugar

1/8 Cup Jack Daniels Whiskey (can be omitted)

2 tsp. crushed red pepper flakes

Set smoker to 225 degrees.

Make meat mixture - do not overwork

Spread half of meat mixture on the bottom of grill pan. Layer pepper jack cheese on top of meat mixture - leaving about an inch of meat on each side.

Top with remaining meat mixture - seal well around the edges in order to keep cheese from leaking out.

Mix the sauce in a small bowl and brush it on.

Smoke the meatloaf until it reaches an internal temperature of 165. If meatloaf has more of a pink center - pop it in the oven for an addition 15 minutes.
