Tulsa is being recognized as the second best pizza city in the country. A report by Pacella Pizza Stone Oven Company says Tulsa is right behind New York City based on Google reviews for pizza places, with an average rating of 4.65.
Mike Bausch, owner of Andolini’s Pizzeria, joined News On 6 in the morning to discuss what makes Tulsa’s pizza scene special.
“We take a lot of pride in elevating the food scene, and never being condescending about food,” Bausch said. “Just loving it with Tulsans and having this real passion for the authenticity and the process.”
There are lots of fantastic pizza places in Tulsa, and this report reflects that. Bausch says Andolini’s pizza is uniquely Tulsan.
“We've called ourselves Tulsa-style pizza because we're not overtly a New York style. We're certainly not a California. So we take that California ingenuity to New York fermentation, and we use an Oklahoma flour, which is very odd in the pizza scenes, it wasn't intended to be a pizza flour,” Bausch said. “So all those things combined to make what we call Tulsa style.”
Bausch says other Tulsa pizza places elevate the scene too.
“All the things we do we bring from a passionate place to make the best product possible. And I think the other pizzerias mentioned do that as well,” Bausch said.
Bausch says that it is no surprise to him that Tulsa has a great reputation for food when compared to major American cities.
“Proximity is not an indicator of greatness. Greatness is an indicator of greatness,” Bausch said. “And I believe that we have that here.”
