Huevos Rancheros

Ingredients
- 2 eggs
- 1 flour tortilla
- 2 tablespoons butter
Rancheros Sauce
- 2 tablespoons butter
- 3 spring onions, finely chopped
- 2 tablespoons Guajillo chile powder (or Ancho chile powder)
- 1 tablespoon ground cumin
- 4 cloves of garlic, finely chopped
- 1 cup local beer
- 1 can fire roasted tomatoes (15.5 ounces)
- 1 tablespoon honey
- Salt
Directions
- Melt the butter in a medium saucepan.
- Add the onion, chile powder and cumin, cook for 4 minutes.
- Add the garlic and cook for one minute.
- Add the beer and simmer to reduce by half.
- Add the tomatoes and honey. Simmer for 15 minutes.
- Season to taste with salt.
- Heat 2 tablespoons of butter in a non-stick pan. Fry the tortilla on both sides, about 1 minute.
- Remove the tortilla and cook the eggs to your liking.
Serve the eggs on the tortilla and cover with Ranchero sauce.
