Kale, Arugula & Quinoa Super Salad

<p>Chef Devin Levine from the BOK Center shares a recipe for a quick and filling salad.</p>

Salad Ingredients:

2 cups Shredded Kale
2 cups Wild Arugula
1 cup Quinoa, cooked & cooled
½ cup Blueberries
½ cup Dried Cranberries
½ cup Apples, diced
½ cup Toasted Pistachios
½ cup Walnuts
½ cup Goat Cheese

Dressing Ingredients:

1 cup Pomace Olive Oil
½ cup White Balsamic Vinegar
½ cup Honey
2 tabl. Dijon Mustard

Directions:

Combine all ingredients for dressing in bowl and whisk till emulsified.  Combine all salad ingredients in large bowl and toss lightly with dressing.  Arrange on plates and garnish with additional goat cheese.
