Cucumber Mint Frozen Yogurt

<p>A refreshing summer treat from the folks at Edible Tulsa.</p>

  • 1 cup chopped cucumber
  • 1 handful mint leaves
  • 4 eggs
  • 2 cups Greek Yogurt
  • 1 cup whole milk (can substitute kombucha or tequila)
  • ½ teaspoon salt
  • 1 ½ cups sugar
  • 1/4 teaspoon cayenne pepper (optional)
  1. Mix all ingredients well in a blender.  
  2. Chill the mixture well.  
  3. Pour mixture into the canister of an ice cream machine* and spin until thick.

*Or pack the mixture into a storage container and freeze.
