Cucumber Mint Frozen Yogurt

- 1 cup chopped cucumber
- 1 handful mint leaves
- 4 eggs
- 2 cups Greek Yogurt
- 1 cup whole milk (can substitute kombucha or tequila)
- ½ teaspoon salt
- 1 ½ cups sugar
- 1/4 teaspoon cayenne pepper (optional)
- Mix all ingredients well in a blender.
- Chill the mixture well.
- Pour mixture into the canister of an ice cream machine* and spin until thick.
*Or pack the mixture into a storage container and freeze.
