Seared Pacific Halibut

<p>Make tasty halibut with lemon, onions, garlic and capers using this recipe from Whole Foods.</p>

2 halibut filets (6 oz each)
2 spring onions
1 lemon
2 Tbs capers
1 garlic clove
2 Tbs olive oil
2 oz vegetable stock
1 Tbs chopped parsley
Salt & Pepper to taste

Preheat your oven to 450 degrees. Thinly slice garlic, onions, and lemons and set aside. Add the olive oil to the sauté pan and heat on high. Season the halibut with salt and pepper, place it into the hot pan. Sear the filet for 2 minutes, and then finish it in the oven for 8 minutes.

In a separate sauté pan, heat oil. Then add the lemons, onions, and garlic and cook until they start to change color. Add the capers and season lightly with salt and pepper. Add the stock and cook until the liquid has reduced by half. Remove from heat and add the parsley. 

Remove the halibut from the oven, plate, and spoon the sauce over and around the fish! Enjoy!
