Ingredients
2 large onions, finely chopped
2 cloves garlic, peeled and minced
3 lbs. ground chuck
1 8-oz. can Diced tomato
1 large egg
1 cup fresh bread crumbs
Salt and freshly ground black pepper
½ cup BBQ Sauce
Mini muffin Tin
Applewood Smoked Bacon
FOR THE MEATLOAF
Sautee until translucent, then cool
Onions & Garlic
Mix cooled onions & garlic with
Ground chuck
Diced tomato
Egg
Bread crumbs
Salt and freshly ground black pepper
BBQ Sauce
Cut strips of bacon in half, lay bacon in muffin tin, fill with 1oz. of meatloaf mixture. Fold bacon over and bake at 325 degrees for thirty five minutes or until internal temperature reaches 160 degrees.
