Stuffed Turkey With Cream Cheese, Walnuts And Dried Cranberries

Ingredients:

1 boneless turkey breast

1 package cream cheese, softened

4 ounces of dried cranberries or cherries

1 cup coarsely chopped walnuts

Egg wash

Flour for dusting

About a cup of Panko style bread crumbs

Directions:

Butterfly the breast and pound out to about ¼ inch thickness. Allow cream cheese to come to room termperature. Mix the softened cheese, nuts, and berries in a bowl.

Lay out the breast, and spread cheese mixture over top to about ½ inch from the edges. Roll breast up, and wrap tightly in plastic wrap and refrigerate at least an hour or so to firm up.

Remove turkey from the fridge, and dredge through the flour, tapping off excess. Dip in egg wash, then roll in Panko and press crumbs into the roll well.

Sauté the breaded roll in a pan with oil or butter over medium heat, browning well on all sides. Transfer to a sheet pan and bake in a 350 degree oven until internal temp is approximately 165 degrees, about a half hour.
