Blueberry Dressing Ingredients

4 ounces fresh or frozen blueberries

2 ounces cider vinegar

4 ounces canola oil

juice of 1 lemon

1 teaspoon Whole grain or ground mustard seed

salt and pepper to taste

Instructions

Blend all ingredients except the oil. Add oil slowly while mixing (a food processor works well). The dressing is best when made a day ahead of time. Mix well before serving. Serve over a mixed green salad with feta cheese, blue berries, and toasted pecans.

Other uses for Blueberry Vinaigrette Salad Dressing

1. Drizzle over veggies before you bake them.

2. Use as a marinade for meats.

3. Sauté meat or veggies in vinaigrette instead of oil.

Tip: Canola Oil will keep homemade dressing from solidifying in the fridge versus olive oil. Dressings will mix back together after a short time at room temperature.
