Ingredients:
½ cup no-sugar-added preserves
1 teaspoon curry powder
1 skinless, boneless turkey breast
½ cup sweetened faked coconut, chopped
¼ cup whole wheat panko (Japanese bread crumbs)
Directions:
1. Preheat oven to 425 degrees. Spray baking sheet with nonstick spray.
2. To make sauce, combine ¼ cup preserves and ½ teaspoon curry powder in small bowl.
3. Cut turkey into 16 strips. Combine turkey, ¼ teaspoon salt, and remaining ¼ cup preserves and ½ teaspoon curry powder in medium bowl; toss to coat. Combine coconut and panko on sheet of wax paper. One at a time, coat turkey strips with coconut mixture, lightly spray with nonstick spray, and place on baking sheet. Bake until fingers are golden and cooked through, about 15 minutes. Serve with sauce.
