Greek Style Whole Wheat Orzo Pasta

Dietitian Stephanie Harris With Southcrest Hospital shows us how to make a delicious Greek style dish, Greek Style Whole Wheat Orzo Pasta

Ingredients

1 ½ cup Whole wheat orzo pasta

2 tsp Olive Oil

1 medium Onion, minced

1 tomato, chopped

7 cups (1.5 lbs) fresh spinach, chopped*

¼ cup feta cheese, crumbled

1 pinch black Pepper, freshly ground

*may substitute 10oz chopped frozen spinach , thawed and well drained

Directions

1. Cook the orzo (follow directions on package).

2. On medium-high heat, heat the oil in a skillet.

3. Add onions and sauté for 5 minutes.

4. Add the spinach and sauté for 4 minutes.

5. Mix together the onion and spinach mixture with the hot orzo.

6. Add tomato, feta cheese, and ground pepper and toss together.
