Baked Oatmeal

Ingredients:

3 cups quick-cooking oats

½ cup brown sugar

1 cup skim milk

½ cup applesauce

2 eggs or 4 egg whites

1 teaspoon vanilla

1 Tablespoon baking powder

½ teaspoon salt

1 teaspoon cinnamon

½ cup dried cranberries

Directions:

Preheat oven to 350°F.

Combine all ingredients in a large bowl. Mix well.

Spray a 9 x 13 inch baking dish with vegetable spray.

Spread mixture evenly.

Bake for 25 – 30 minutes or until the edges are golden brown.

Immediately spoon into bowls; add milk.

Top with additional fruit if desired.
