1 (8 oz.) block cream cheese, softened to room temperature
1 (15 oz.) can artichoke hearts, drained and coarsely chopped
1 c. mayonnaise
1 c. shredded Parmesan cheese
¼ c. roasted red bell pepper, diced
1 tsp. garlic salt
2 tbsp. chives, snipped
1 tbsp. dried minced onion
1. Preheat oven to 350 degrees.
2. Combine all ingredients well either in a mixing bowl or in a food processor. If using a food processor, pulse until desired consistency.
3. Spread mixture into a shallow baking dish. Sprinkle additional Parmesan cheese on top, if desired.
4. Bake for 30 minutes, or until hot and bubbly. Garnish with additional chopped chives. Serve with bagel chips, crispy garlic toast, or lightly toasted pita wedges. Enjoy!
