Ingredients:
2 boxes Whole Wheat or Low Sodium Stove Top Stuffing mix for chicken
4 individual stalks of celery, chopped
1 onion, chopped
About 2 c. chopped mushrooms
½ c. Walnuts
1-2 Tbsp. Olive oil or Trans Fat Free Margarine
Start by sautéing the chopped celery, onion, and mushrooms in a skillet with the oil. Cook until soft or until the onion is translucent. Add the walnuts. Prepare the stuffing mix as directed. Add prepared mixture to stuffing mix and serve.
This recipe is easy to do ahead of time. It also reheats well in a covered dish in the microwave.
