4 cups 1' cubed Asiago bread from Panera
6 tablespoons olive oil
3 tablespoons red wine vinegar
2 garlic cloves, minced
Salt and freshly ground black pepper to taste
1 large head romaine lettuce, chopped
4 large ripe tomatoes at room temperature, cored and cut into cubes
¾ cup diced red onion
10 large fresh basil leaves, washed, dried, and torn
3 tablespoons fresh minced parsley
1 (8-ounce) package fresh mozzarella cheese, cubed
Optional (1 cup thinly sliced salami)
Place Asiago bread cubes on a baking sheet. Bake at 325 degrees for about 15 minutes until lightly browned. Cool.
Mix together the olive oil, vinegar, and garlic. Set aside. Into a large salad bowl place romaine, tomatoes, red onion, basil, parsley, cheese, and if using, the salami. Add the dressing and toss to mix thoroughly.
Serves 4 as main dish and 6 as a side salad.
