1 small or ½ medium head of white cabbage
3 - 4 carrots, grated
4 spring onions, finely sliced
1/3 cups walnuts
1 T fresh chopped mixed herbs such as parsley, basil, chervil
Pesto Mayonnaise
1 cup mayonnaise
2 t lemon juice
1 2 t pesto
Salt and pepper to taste
To make the dressing, mix the pesto, mayonnaise, and lemon juice together. Set aside or chill until ready to use.
Remove the outer leaves of the cabbage and discard. Using a food processor or a sharp knife, thinly slice the cabbage and place in a large salad bowl. Add the carrots and spring onions together with the walnuts and herbs. Mix thoroughly. Stir the pesto dressing into the salad or serve separately in a small dish.
