Yield:
24 servings, 1 toast and 2 heaping tablespoons tom
Ingredients:
4 cups chopped and seeded roma tomatoes
1 medium purple onion, chopped
6-8 basil leaves, chopped
2-3 tablespoons oregano, chopped
3-5 cloves garlic, minced
1/2 teaspoon black pepper
2 tablespoons olive oil
1 loaf (16 ounces) French bread, sliced into 24 pieces
Olive oil cooking spray
Directions:
In a medium mixing bowl combine tomatoes, onion, basil, oregano, black pepper and olive oil, set in refrigerator to marinate.
Spray bread with cooking spray, broil until lightly browned.
Spoon mixture onto bread and serve.
