Yield:
4 - 6 servings.
Ingredients:
1 pkg. favorite dry spicy Caribbean marinade
1/4 cup warm water
2 tbsp. orange juice
1 tbsp. dark brown sugar
1 tbsp. white wine vinegar
1 lb. kielbasa, cut into 1/4 inch slices
1 green bell pepper, cut into bite-size pieces
1 medium white onion, cut into bit-size pieces
4 squares of aluminum foil (heavy or double strength) 18 inch squares each
1 pkg. pita bread
Directions:
Mix dry marinade, water, orange juice, brown sugar, and vinegar and blend until smooth. Divide the sausage, bell pepper and onion into center of foil squares. Fold over each of the four sides of each packet. Then open one side of each packet and pour an even amount of the marinade into the opening. Seal packet and shake to coat the mixture. Place the packets on a preheated grill for 45 minutes and turn halfway through cooking time. Remove packets from grill. Carefully open each packet to allow steam to escape. Cool for 2-3 minutes. Serve kielbasa packet mixture
in warmed pita halves.
